Chinese milk vetch honey
Astragalus sinicus
A pale spring honey from Chinese milk vetch, sown on East Asian rice paddies as a green manure. It is clear, water-white to pale gold; in China it is called ‘ziyunying’, in Japan ‘renge’.

The milk vetch flowers for only two to three weeks and is ploughed in before the rice is planted; in Japan its honey is called the ‘king of honeys’.
