Eurya honey (wild osmanthus)

A winter honey from small Eurya shrubs and trees, known in China as ‘wild osmanthus’ although they are unrelated to true osmanthus. It is water-white and sets into a white mass of very fine crystals.

Eurya flowers in the cold months, so most of this honey is made by the Asian honey bee (Apis cerana), which forages at lower temperatures than the western honey bee.
